Claire Criscuolo, noted restaurateur and cookbook author, will discuss the importance of eating 7-9 fruits and vegetables a day and show us how to prepare some given our busy schedules.

Claire will prepare her Spring Menu
using locally grown fruits and vegetables:
 
  • Appetizer: Chimichurri Quinoa and Bean Salad 
  • Soup: Celery Velvet Soup with Pine Nuts 
  • Pasta: Rigatoni with Butternut Squash 
  • Dessert: Open Apricot Tart
